Weekend Brunch Egg White Omelette

– The great thing about this basic brunch recipe is that it is so simple and quick to make, it’s versatile too as you can pretty much add anything you want to the egg whites to create your own perfect omelette. Try one of these favourite recipes to get you started.

Mushroom & Egg White Omelette

Ingredients:

Liquid pasteurized egg whites
Handful of sliced mushrooms
Salt & pepper
Garlic powder
Small onion, chopped

Method:

Fry the mushrooms and onions in extra virgin olive oil in a medium to hot frying pan
Add a tsp of garlic powder (or to taste)
Add the egg whites, folding into the mushrooms gently but don’t stir, until the egg whites are firm but soft
Fold over in half and serve, wash down with a Virgin Mary!

Green, Red Pepper & Egg White Omelette

Liquid pasteurized egg whites
Small onion, chopped
Handful of mushrooms sliced
Half green bell pepper chopped
Half red bell pepper chopped
Salt & Pepper
Dash of Tabasco for that kick

Method:

Fry the chopped onion, green & red peppers followed by the mushrooms a few minutes later, until soft
Add the egg whites and fold into the softened vegetables
Add the salt & pepper to taste and the tabasco
When the egg whites are cooked but still soft remove from heat, fold and serve.

These are just two recipes, try ham & mushroom, chorizo & peppers, add Worcestershire sauce for a kick, anything! Just keep it clean.
