Walnut & Banana Protein Loaf

– It’s January, if you’re like me then you definitely over-indulged over the festive period and although we’re all now on a health kick, working out and watching what we eat I still have that sweet tooth.

This is where my rather nice (if I do say so myself) walnut & banana protein loaf helps with those 4pm cravings. Packed full of protein, sweet because of the bananas and the Vitafiber flour & sugar substitute you can make a loaf of this in one go and take a slice with you to work or the gym each day. Perfect for when you need a sweet but healthy snack.

Oh and before you ask what the difference is between calling this a loaf (as in bread) and not a cake, I haven’t a clue. Apparently if it contains Baking Powder then it’s a ‘quick bread’ so you call it a loaf. It’s more like a cake though. Either way it’s delicious.

Ingredients

1/2 cup of Bulkpowders Liquid Egg Whites

1/2 cup of wholewheat flour

170g of Bulkpowders Vitafiber Powder

2 scoops of Bulkpowders Pure Whey Protein

2 ripe bananas, mashed

2 tsp of baking powder

Pinch of salt

150ml of water (or you can substitute water for Coconut Milk or Unsweetened Almond Milk)

Handful of walnuts, chopped and crushed into small pieces.

Instructions

This really couldn’t be any simpler, get a bowel and mix it all together until you have a nice thick smooth pourable consistency.

Pour into a greased proofed baking tin (use coconut oil to greaseproof the tin) and bake in an oven at 170c for approx 45 – 50 minutes.

Walnut & Banana Protein Bread

Variations

Instead of walnuts you could use chopped almonds or just exclude altogether and make Banana bread using the same recipe. You can also try using flavoured whey protein to add to the flavour or just to mix it up a little bit!
