Haddock in Tomato Sauce

Haddock is a white fish similar to Cod and is found in the North Atlantic. Nutritionally per 100g Haddock contains 24g of protein with no carb content and virtually no fat, which helps make this is the perfect light low-carb recipe after the indulgent and heavy Easter weekend. Better yet is that it can be prepared and cooked in 35 minutes.

Ingredients

1 tbsp. olive oil

1 onion, thinly sliced

1/2 tsp. of ground paprika

2 garlic cloves, crushed

1 aubergine, chopped

400g can of chopped tomatoes

4 x 175g skinless Haddock fillets

Method

Using a non-stick frying pan, heat the oil and fry the sliced onion and the aubergine. After about 4 minutes, just as the vegetables are browning cover and allow them to steam-fry to soften for a further 6 minutes.

Stir in the tomatoes, the garlic and the paprika and cook for approx. 10 minutes until the aubergine is soft.

Place the haddock on the sauce and cover for another 8 minutes or until the fish can be flaked using a knife – be careful not to overcook and dry the fish.

Serve with a rocket salad dressed with lemon juice and olive oil. Season to taste with salt & pepper.
